Crystallisation: You may notice that over time, all Bee Baltic honey changes its structure and sets (crystallises). Additionally, you may see beautiful light patterns forming on the walls of the jar. These light patterns are commonly known across Baltic beekeepers as the "honey frost.” Crystallisation and changes in colour are all signs of natural, raw, unpasteurised, and unprocessed honey. Should crystallisation occur, gently warm the jar in hot water.

Great tasting honey - packaging needs some thought

This is a great honey, really tasty. However depending on the weather it can have the gloopy consistency of concrete. In the long jars with relatively narrow tops - getting access to the honey at the bottom of the jar becomes a mission. Bee Baltic used to do this honey in wider, squatter jars which made getting the last little bits out so much easier. I literally resort to a steel table knife to carve the honey out of the jar and that is not ideal as I would much prefer to use a wooden spoon - but you simply can't get the leverage in the long jar with honey whose consistency as I mentioned could be like concrete. This is has led me to getting my honey from other sources every other month so I don't have to fight with my food

Great honey, I'm really enjoying it.

I bought a small jar to try it, but it soon disappeared, my family loved it.
So I bought a 1kg jar, and I've hidden it at the back of the cupboard, so at least for now it'll be safe, for now.
However, when the family find it, I'm sure it will disappeared just as quickly as the small jar.
Happy days! On a honey hunt.

Acquired taste I think

Not as sweet as straight pollen but with the extra enzymes and honey it has a fuller and deeper flavour. I quite enjoy it but I could see it going the other way too - it's a matter of opinion. I add a teaspoon to my smoothie with a spoon of pollen too.
